Founder and charcutier Chad Nelan grew up with a hustler’s spirit in Aurora, Colorado—now home to beautiful restaurants like Annette, but a tougher place back then. He put his hands to good use by becoming a butcher and discovered a passion for charcuterie while playing around with techniques behind the shop counter.
