Beans, Gold Indian Woman

This small, heirloom golden bean was brought to the country by Swedish immigrants in the late 1800s and then adopted by Native American farmers. It's an excellent soup and salad bean that cooks fast compared to other dry beans, and it has a creamy texture that holds up to slow cooking.
